AyurGheeTailaLipidMatrixStabilityChecker
Ayur Ghee Taila Lipid Matrix Stability
ℹ️ Utility evaluates stability of polycomponent lipid systems of Ayurveda according to AYUSH Standards and API Part-I:
• Acid Value: marker of hydrolytic rancidity
• Peroxide Value: marker of primary oxidation
• Residual Moisture: ≤0.25% for Ghee, ≤0.50% for Taila
• Melting Point: identification and purity of lipid base
• Saponification Value: fatty acid profile
• Antioxidant Capacity (TEAC): preservation of phytochemicals in lipid matrix
⚠️ WHY STANDARD RANCIDITY TESTS ARE INSUFFICIENT:
Ayurvedic Ghee and Taila are NOT pure fats.
They contain hundreds of phytochemical compounds from herbs that:
• Can CATALYZE oxidation (pro-oxidant effect of some flavonoids)
• Can INHIBIT oxidation (antioxidant effect of curcumin, amalaki)
• Alter viscosity, melting point and matrix rheology
• Interact with fatty acids during heating (Sneha Kalpa)
Simple PV/AV measurement does not reflect real stability of polycomponent system.
This utility adds antioxidant capacity control as integral marker of
therapeutic activity preservation of herbs in lipid medium.
Usage:
AyurGheeTailaLipidMatrixStabilityChecker.exe → demo mode
AyurGheeTailaLipidMatrixStabilityChecker.exe input.csv output.json → evaluate data
Input format:
BatchNumber,ProductName,LipidBase,AcidValue,PeroxideValue,Moisture%,MeltingPoint_C,SaponificationValue,AntioxidantCapacity_TEAC
Example:
AYUR-001,Brahmi_Ghrita,Cow_Ghee,1.8,3.5,0.15,34.5,225.0,45.0
Adaptive limits by lipid base type:
• Cow Ghee / Ghrita: AV ≤3.0, PV ≤10.0, Moisture ≤0.25%, MP 28-38°C, SV 210-240
• Sesame Taila: AV ≤4.0, PV ≤15.0, Moisture ≤0.50%, MP -5 to 5°C, SV 188-200
• Coconut Taila: AV ≤4.0, PV ≤10.0, Moisture ≤0.30%, MP 23-27°C, SV 248-265
• Mustard Taila: AV ≤5.0, PV ≤15.0, Moisture ≤0.50%, MP -10 to 0°C, SV 170-190
— PARAMETERS AND THEIR SIGNIFICANCE:
• Acid Value:
Free fatty acids = result of triglyceride hydrolysis.
Increases with water presence, high storage temperature, lipase activity.
For Ghee: strict limit as water must be completely removed during preparation.
• Peroxide Value:
Primary oxidation products of unsaturated fatty acids.
High PV = onset of rancidity = loss of therapeutic properties + potential toxicity.
Sesame oil is more stable due to sesamol/sesamolin content.
• Moisture:
MOST CRITICAL PARAMETER for Ghee.
>0.25% = risk of mold growth, hydrolysis, taste alteration.
Higher levels acceptable for Taila as oils are less sensitive to water.
• Melting Point:
Marker of lipid base identity.
Deviation = possible adulteration (ghee substitution with vegetable fat).
• Saponification Value:
Average molecular weight of fatty acids.
Confirms compliance with declared oil/ghee type.
• Antioxidant Capacity (TEAC):
Integral marker of phytochemical preservation from herbs in lipid matrix.
TE decrease = degradation of active components even at normal PV/AV.
Unique parameter for polycomponent Ayurvedic lipids.
💡 Usage tips:
1. Sample at temperature above melting point (for homogeneity)
2. Determine moisture by Karl Fischer titration, not loss on drying
3. Determine peroxide value immediately after opening package (light/air destroy peroxides)
4. Measure antioxidant capacity by TEAC/DPPH/FRAP method in lipid extract
5. Track PV and TEAC trends simultaneously: rising PV + falling TEAC = active degradation
6. For Ghee, below-normal melting point may indicate vegetable oil adulteration
⚠️ Note: This utility treats Ghee/Taila as POLYCOMPONENT PHARMACEUTICAL SYSTEM,
not as food fat. In Western practice, ghee is tested under food standards (FSSAI/Codex).
In Ayurveda, ghee is ANUPANA (drug vehicle), and its stability directly determines
bioavailability and efficacy of herbs dissolved in it. Antioxidant capacity control
bridges the gap between chemical fat stability and pharmacological activity of the preparation.
